I watched the video and couldn’t help but think you can get the pork skin on a picnic. I cooked one a couple of month’s ago, but snacked on the crispy skin before making Cubanos.

Sounds really good, and I’ve been known to throw a few pork rinds on a pulled pork sandwich myself, but I’d personally say it lives in the neighborhood of whole hog but not on the same street.
Not a criticism of his sandwich at all, but a whole hog in Eastern North Carolina is this beautiful combination of chopped fatty and lean meats along with that delicious skin mixed in. He nailed the sauce and the salt but just pulling a pork butt isn’t going to match the chopped meat mixture you get from a whole hog cook.
Again, not a criticism, just an observation.

I just signed up for an overnight pork butt & whole hog class. Since both will be side by side to compare at the end, I’ll report the difference for those of us (like myself) who don’t know.
