    Pork Belly Banh Mi

I am going to tackle this recipe for my weekend project.

This rich and flavor packed recipe for our smoked pork belly version of the classic Vietnamese banh mì is sure to make your knees buckle.

Meathead et al, would/could you sous vide, THEN smoke?

We have a Viet restaurant here that makes killer Banh Mi called Pho King Noodles (Not kidding. They aren't trying to be cheeky, either, they barely speak English). They put head cheese on their Banh Mi and it send it to the next level. Good luck this weekend.

If you find an authentic Vietnamese Ban Mi place you will see a wide variety of processed pates made from pork or chicken. Don't overlook a splash of fish sauce!

This is one of my favorite cookbook authors and I love this book. Setting up a Banh Mi serve-yourself buffet makes for a really fun party.

SheilaAnn I have not tried Sous Vide but I suspect it wopuld work great. I would want to grill it enough to get the surface a bit crunchy.

And the results: my ends got a little too much burnt. I used pecan because it was what I had. I skipped the suggestion of head cheese because what my deli had, I did not care for. Occupational hazard when you used to make your own. I cut the carrots in discs because they were too small to make match sticks per the OG recipe.

PBCDad for sure! But I will mind the pork belly a lot better. 🤣🤦🏼‍♀️😜 and I think I will add a bit of heat to the mayo. It was good with the toasted sesame oil, though.

klflowers yessir, in a way. We called it coppa de testa. The company went out of business, but here is what it looked like.
