Pink salt. Celery salt is BS. Why? Because you want to control the nitrates you add and pink salt (SPECIFICALLY curing salt, Prague powder #1, not Himalayan pink salt) has a precise percentage, allowing you to do that.
Also, liars will say something is uncured when adding celery salt and the point of adding celery salt is that celery has... nitrates. So you're still adding nitrates, just not in a controlled manner.

Agreed. I have the same beef (sorry 😬) about taking herbal supplements instead of pills for medical conditions: I prefer to know how many mg of digoxin I am taking versus chewing on foxglove leaves!
