    Thanks. This appears to be for a long fermented, (not enough yeast for same day use), NY style, (thinish crust), 'za.

      Yes, I put the balls in a proofing box in the refrigerator for three days. The flavor is amazing

      You can freeze the balls as well. Then take them out, thaw and use. You may need to knead a bit and reshape.

    Definitely a NY style. This is similar to the recipe by JKLA on Serious Eats. I like the scalability of it. Thanks for sharing!
