    Mexican Paletas

    Dessert
    Prep Time: 10 mins | Cook Time: 0 mins | Servings: Servings: 8 servings

    Ingredients:
    3 cups ripe fresh fruit (strawberries, pineapple, mango, watermelon, cantaloupe, etc.), roughly chopped
    1/2 cup refined sugar
    1/3 cup water
    3 tablespoons freshly squeezed Key lime juice (or regular lime if Key lime is not available)

    Directions:
    Gather the ingredients.
    Place half of the fruit, sugar, water, and lime juice into a blender, and blend until smooth.
    Dice the other half of the fruit. Spoon diced fruit into ice pop molds, then add the blended mixture, leaving about 1/2 inch (approximately 1 centimeter) of headspace for expansion.
    Place the molds into the freezer and allow at least 6 hours for your treats to firm up completely. If your molds don’t have built-in Popsicle sticks (or you are using paper cups or some other receptacle as molds), take your pops out of the freezer after about an hour and insert wooden sticks into the slushy mix; return to the freezer.
    Enjoy.

    Notes:
    7-23-21 I used only 1/3 cup sugar. Tasted fine! I used mixed stone fruit.
    9-2-24 ⅓ cup sugar, mixed berries

    Yummmmy!!!!! When I can find these GF (which always makes me wonder why so many shops aren’t GF with these), I love them! I also like coconut!

      If you must be strictly gluten free, like me as a Celiac, there is as much risk on how it’s handled and cross-contamination as there is in the actual ingredients. I can’t/won’t eat anything from a store that isn’t specifically marked as “Gluten Free.”

      The shops I’ve been in, they say they aren’t GF…which makes me ask how can they not be?? But over the last few years, restaurants will tell you nothing on the menu is gluten free, which I don’t believe but I think it’s so there is no risk to them.
