The best Tartar sauce ever
I found this recipe many years ago, I’m talking 40 years ago. It was in a magazine I took called In Fisherman. Chef Lucia Watson had developed it and everyone was raving about it. It was so good. Then life happened and I lost the recipe somewhere along the way. About 5 years ago I found two of Chef Watson’s cook books in some used books and bought them just to get this recipe back. Pro tip, make your own mayo, let the tartar sauce rest overnight in the fridge after you make it.

To make it easier to copy and paste:
HOMEMADE TARTAR SAUCE
MAKES ABOUT 1¼ CUPS
1½ cups Basic Mayonnaise (page 259) or good-quality prepared mayonnaise
1 dill pickle, minced
2 shallots, peeled and minced, or 2 tablespoons chopped scallions
1 tablespoon chopped capers
I tablespoon chopped fresh parsley
I tablespoon chopped fresh chives
1 tablespoon Dijon mustard
1 teaspoon lemon juice
Salt and freshly ground pepper to taste
Whisk all of the ingredients together.
