    Bourbon Bacon Onion Jam

    Today I made some Bourbon Bacon Onion Jam. It turned out incredible. Can’t wait to slather this on a burger.

    Ingredients
    2 lbs. thick cut bacon (I know make it with 3 lbs. of bacon)
    2 large sweet onion
    4 or 5 cloves of garlic
    1/2 cup Bourbon
    1/2 cup maple syrup
    1/2 cup brown sugar
    1/3 cup apple cider vinegar
    1 Tbsp paprika
    salt and pepper

    Cut up the bacon into about 1/4 inch strips. Cook over medium heat to render a bunch of the fat and make it crispy. I did mine in two batches 1 pound at a time. Reserve about 1/4 cup of the bacon grease. Drain on paper towels. I left mine a bit chewy because I like it that way.

    Dice up the onions and mince up the garlic

    Cook off the onions and garlic in the reserved bacon grease. Salt and pepper to taste.

    Let them get nice and golden

    Add the bacon and everything else to the onions and continue to simmer

    Reduce down until it gets thick and sticky.

      I made this in the past and I agree it is delicious. I’d make it again but I found it difficult to store so it didn’t turn into some kind of congealed mess, and I had to scrape it out the next day for spreading on burgers. Maybe my mistake was storing it in the fridge?

      Killer recipe though and looks amazing.

        I'd keep it in the fridge when not using it, because this recipe doesn't look like it has any self-preserving qualities. You might need to let it warm up to room temp before using. And/or don't reduce it down quite so far, so it stays more fluid and spreadable at fridge temp.

          I couldn’t wait for a burger. I spread some cold from the fridge onto some crackers.

          Let’s hope I have some left for a burger or two.

                    I have vacuum sealed and frozen it. It is fine.
