I've had a Rec Tec for 6 years, really love it and I have figured out a way to keep the drip tray clean. I saw you placed your brisket over a tray and I do something similar. Traeger sells various sizes of drip pan liners and I found one that fits my drip tray, on top of that but under the grate (also under the food) I use these disposable pans I get from Amazon. Thanks Man, I'll definitely check that out! Yeah I prefer to try to catch whatever drippings I can get off of the cooks to use afterwards. This was the first time I didnt have a large amount of liquid after the cook in the pan. I am guessing its because with the GMG I'm not using a water pan as I did in the previous electric smoker so there wasnt as much moisture in the cooking chamber to condense? I don't know..
There's not a lot of room between the grates and the drip tray on this and the angle on the drip tray can make placing anything under there an adventure. I do have someone making an add on upper rack that will provide a lot more cooking space than that small rack in the picture of the brisket. That will help with being able to place a decent drip pan.
