My Turn!
all are welcome!
full tray! Clockwise:
Pulled Pork: tasty, but mushy. The Aztec Gold was really good, though.
Sausage: smoky and super flavorful.
PBBE: 😩 they were cold, so the fat had gotten pasty, but the seasoning was good. Again, tastier with that Aztec Gold.
Assorted Pickly Things.
Loaded Mashed Potatoes: pretty good, lukewarm.
Mac & Cheese: with hatch chiles (not that you good tell) and the sauce was creamy…. But rather thin.
Mexican Street Corn: squeeze some lime!!!! Yum! Yum! Yum!
Texas Twinkie: brisket and pimento stuffed, bacon wrapped, smoked jalapeño. Meh…. The jalapeño was super thick and thus raw.
Smoked Turkey: didn’t taste because I don’t care for smoked turkey, but I heard it was good.
Spare Ribs: my favorite!!! Perfect bite, great rub. WI Bubba detected a hint of sugar and he was right!
Brisket: nice smoke ring, nice flavor, but a smidge dry. The red sauce at the table helped!
Obvious: White bread…. Martin’s to be exact.
my tray
the crew!

I hate to call people out like this, but I'm glad klflowers was able to make it to the hotel we were staying at least. You could have brought the 3 people that showed up outside to hang out with us.

As the curtain falls on the MeatUp once again I am reminded that the best part of this is the fellowship. Great food, greater people. It was good to see familiar faces from the San Marcos MeatUp earlier this year and to meet new folks. Thanks to all who traveled from both far away and nearby. Looking forward to seeing everyone again.

We’ll just call you Dude and say thanks for all your research and securing great rates on the hotel. I still think you can have a side gig as an events coordinator. Well done.Last edited by LA Pork Butt; October 25, 2026, 07:38 PM.

We're on the plane waiting to take off, so I guess the MeatUp is over for us.
We just want to say a huge thank you to the folks that helped put this together and the amazing jayjordan for being so generous with his time. We'll see y'all at the next one!
P.S. If you happen to come across my missing black travel mug, you are obligated to bring it to the next MeatUp so I can get it back. 😂Last edited by WI Bubba; October 27, 2026, 03:48 PM.

Bruce and I are at the airport waiting on our flight, and I want to say “Ditto” to Will’s comments above. I’m kind of a newbie at these meat ups, and appreciate the ones who put so much time into organizing the trips!
We really appreciate jayjordan for the rides to and from the airport and more! We really enjoyed the camaraderie with all that were there! Looking forward to the next one!

And just to finish out the trip on a happy note….i was able to spend some quality time with family.
one last go….. Huskee much better here. Served with chicken fried chicken. Biscuits not shown, but they were light as air.
and a trip to Texas would not be complete without…….
Disclaimer: they paid more attention to my boot with metal reinforcements than the tortillas this time. 🤣🤣🤣
and drove by Buc-Ees and said “hell nah!”
