It’s finally time folks! Since Mosca is probably in San Marcos now, I thought I’d go ahead and start our OFFICIAL MEATUP POST for the October 24’ HoeDown. A few folks are also traveling today, so this is where you can post all your food and travel pics if ya want. Smart ass comments are also welcomed, if not expected. 🥸 With the rest of us coming in tomorrow, there’ll be lots more stuff to post afterwards. Looking forward to seeing familiar and some new faces! Carry on…

Cookers:
Oklahoma Joe Offset (older thick steel version!)
Camp Chef Woodwind
OK Joe Bronco
Weber Genesis
Ooni Karu
Weber Kettle
My goal is to eventually have at least one of every style of cooker….. I have work to do. Lol!
Thermometers:
ThermoWorks Thermapen MK4
ThermoWorks Thermapen ONE
ThermoWorks Thermopop
ThermoWorks RFX
ThermoWorks IRK-2 Infrared
Maverick XR-50
TempSpike Plus
Other Gear:
Megaforce 3000 Meat Grinder
Weston 7-pound sausage stuffer
Jerky Gun for making poppers. (Game changer!)
Amaz-N-Tube
Original SnS with drip n griddle
Weber Chimney
Fuels Used:
Splits/Chunks, whatever I can get. Usually B&B competition. Favorites are Cherry, Apple, Post Oak, and Hickory.
Pellets, Lumberjack.
Charcoal, whatever is on sale. Currently have a bunch of KBB. Will eventually try B&B. Use whatever lump is on sale in my Ooni.
Propane, Blue Rhino.
Rubs:
Usually make my own riff’s on Memphis Dust and BBBR. Also use Meathead’s commercial rubs and occasionally try something new. I like a couple from Tuffy Stone and Kinder’s. After several surgeries, I’m very sensitive to “spicy” stuff, so I need to be careful about heat levels.

I of course love smoked meats of all kinds, but also like quick cooks like chicken portions, pork tenderloins, steak and fish. Really into cooking of all kinds.
My outdoor kitchen has a Lone Star Grillz Adjustable and it is wonderful. There also is a Pit Boss 5 Burner Ultimate Griddle and a Pit Boss Copperhead pellet grill.
There is an outdoor fire pit that has grilling capability and limited Santa Maria-style grill raising and lowering.
FireBoard 2 Pro

Made it to Big Spring. We're the.only ones here without a pickup truck, should of brought ours to fit in. I'll get a cattle guard put on the Tahoe to look local at least.

Large Big Green Egg, Weber Performer Deluxe, Weber Smokey Joe Silver, Fireboard Drive, 3 DigiQs, lots of Thermapens, and too much other stuff to mention.
Well the plane landed and was at the gate 20 minutes early… and then there was a 75 minute wait for the rental car. I was going to go to a place in San Antonio called The Institute of Chili, but I couldn’t verify they were open, and nobody answered the phone, so instead I headed into San Marcos.
I asked someone “in the know” where I could get some good tacos here in SM… she gave me a pamphlet “Where to Dine in San Marcos”… then I looked at her over the top of my glasses, she smiled, and she wrote down on a piece of paper, “Toma Taco”.
Holy shyte.
I make great salsa. But nothing like this. I know, all salsa looks the same, and you can’t taste a picture. This stuff is AMAZING. I can’t tell what is in it that is different. I’m going to guess that it’s a little chicken bullion, and maybe cumin? It’s just the tiniest shade of something, I don’t know what.
That’s an order of taquitos with avocado and queso fresco. You get FIVE. You can mix the meat, so I got two carne asada, two carnitas, and one chorizo. On the side you have a pan seared jalapeño (not very hot) and a couple pan seared scallions, cilantro, onions, and lime, and charro beans. ESTUVO INCREIBLE. They served two side sauces in squeeze bottles: a jalapeño cream sauce and a tomatillo-ancho sauce, both were excellent but the tomatillo sauce was OUTSTANDING.
Sorry Sid P only one meal; this one was excellent, and didn’t leave me wondering WTF the way Black’s Original did!

Panhead John I may or may not recall drinking "alone" with some non-meat-up people one night much later than that

A room. They’re pretty loaded up, for being pretty compact. If I were a traveling rep, I could spend an extended stay here, but it would max out at a couple-t’ree weeks.
And a full sized fridge. Some PA kolbassy and a big ol’ bag of cheese, mustard, hot sauce, and some Texas beer! That’s the high life.
