          At the Tabasco plant. From mixing, to ageing in oak barrels in the warehouse, to bottling, to tasting the various Tabasco versions in the company store.

            Shrimp Trilogy at Prejean's. Fried, Stuffed and with Grits. I loved the Cajun Shrimp and Grits, so different than the " Southern Shrimp and Grits" I have had with many a Sunday meal. The green beans were very flavorful as well.

              I wanted to give a special thanks to Danielle from the Lafayette Convention and Visitors Commission for supplying all of our attendees with special swag bags for us! Her recommendations for hotels, attractions and restaurants were spot on, we enjoyed everything. Everyone also was given a commemorative Cajun Country MeatUp coffee mug, courtesy of Meathead Thanks again Meathead for your generosity! And thanks to smokenoob for the idea of T-shirts to mark this special weekend, and CandySueQ for handling the printing and delivery to us. The shirts are awesome!

              I also wanted to give a very special thank you to everyone who attended, I had a blast! Any of these MeatUps is only as good as the quality of the people who attend, and this one did not disappoint. I also know that attending one of these MeatUps isn’t cheap and usually requires lengthy driving or flying time, so I really do appreciate it everyone!!!

                It was wonderful to meet in person folks I’ve been talking to since 2014 about so much more than bbq and food. We have something really special here, and quite worthy of preserving. I only wish more of you could have been there. It was terrific.

                    It was definitely a good time had by all Clint! In fact, several people mentioned they’d like to see this become a yearly event. We just barely scratched the surface of everything there is to see and do in Lafayette. There’s a ton of quality restaurants and attractions left to visit. Hmmm

                      You know I should but I’m in that stage of life with a 7th and 4th grader and I try to prioritize and use most of my off time around them… family vacations, sports, etc. I can tell already that time with them is fleeting and I want to soak up as much of it as I can before they don’t want to hang out with me anymore! That will be long before retirement so realistically I’ll be able to attend these before then.

                    Panhead John Purc smokenoob After seeing the photos from the Tabasco plant, and the different flavors, I hit them up for a couple of their hotter items, the Scorpion and Habanero, which aren’t available locally. Both are pretty good!

                      CaptainMike They’re called creeks here. In fact I was raised on Cache creek. I’ll have to do a bit of asking around to see where they are called cricks. I remember the Beverly Hillbillies called them cricks. My people thought they got kinda upedity when they got money.

                      Oak Smoke this ice cream would have offered no relief from the spice. One flavor was jalapeño and the other was chipotle-raspberry. Next time I go there I'm bringing my own toilet paper.

                      They’re both pretty good. The scorpion is hotter, but both are pretty hot. What I like is that you can taste the difference between habaneros (fruitier, brighter) and scorpions (more savory, darker). Both are excellent.

                      Every time I open the Tabasco I take a big whiff of it and it takes me back to those barrels aging the peppers and I remember how great our trip was!
