I'm now 5:15 minutes into the cook. The wood I have (pecan) is not seasoned enough, or perhaps pecan just burns this way, but I'm having a difficult time keeping my temps up. I've got all the vents open and the firebox door open. I built a huge fire to begin and got her up to 350 before putting the brisket in, but having to tend it every 15 minutes to maintain 275.
