    Great lookin' smoker for sure. I did notice some of the screw attaching the handle to the lid need to be snugged up.

        First cook in the books.

        One rack of Last Meal Ribs cut into two and hung from the Gateway Rib Hanger. I ran a calibration/season run on Thursday then the rib cook on Friday in the snow. Perfect weather for the first cook.

        I am already able to hit the target range of 220 - 235 degrees for about 5 hours. I did have to make quite a few small manipulations on the air intake and exhaust dampers to keep it in that range during the rib cook. The temp really didn't swing wildly but I don't think I'll have to babysit it as much after a few cooks. I didn't use the water bowl this time around. The flavor was great! I think the grease hitting the coals really added it's own flavor to this cook. There wasn't as much bark as I wanted so next time I'll put the water bowl in and see what happens

          I made a stainless steel hook for the lid so I can just rest it on the side of the drum. The hook is two eye bolts held together with a two fender washers, two bolts, and two nuts.
