    So, there was that first brisket…
    set up for a long cook…
    all nighter…
    got up several times during the night…
    all seemed ok…
    then at dawn, went to check…
    opened the lid and thought I had ruined it!
    had family coming and had another course, in case the brisket didn’t work…
    threw it away before anyone saw it!
    after everyone left, I read it was supposed to giggle and look like a meteorite!

      Pity the poor guy who posted pics of his pork butt on the Facebook page of guys who own a brand of pellet cooker. He was informed by a number of posts telling him he had burned that sucker something horrible and what he needed to do next time to correct his failure. It looked like really good bark to me.

    I recently did some ribs on my Kamado and forgot to install the heat deflector. Maybe I should have said I recently did some rib jerky, because that's more like how it came out...

    Burnt Finger Tips...moving tin foil pans or lifting lids from pots/kettles that were obviously too hot handle

    Goin back a few years I was charring a cook & couldn’t figger out what was doin wrong cuz I wuz usin either my chef’s alarm or thermo pen, don’t remember but it was ONE of em, just one. It was a cold wintry day and I was burnin food away not believing what I was doin cuz my thermo meter was tellin me to turn the heat up. I was usin my Napoleon (gasser to those in Oconomowoc) & then I saw the little c on the reading. I always check, even years later, yessir!

        The last mistake I made was thinking I made a mistake.
        "These ribs are overcooked!" she said
        "No Problem, that is what BBQ sauce is for," I replied as I poured BBQ sauce over the rack.
        I explained that BBQ sauce and Char combine for a new flavor, it is a new technique.

              First time using my Weber summit Kamado I overshot the temp I wanted. Closed the vents too long and snuffed the fire. Blew on the charcoal to get it going again and got ash all over the food!!

                In my old guy memory it appears there have been so many that not a single one stands out to tell about🙄.

                1 brisket cook ever, left the ash catcher off after I dumped it to prepare for the cook. Rolled the kettle close to the house on top of some pine bark mulch I had laid down. Got to temp and put the brisket on and went somewhere with my wife for more than an hour. When I came back my brisket was being kissed by smoke - pine bark mulch smoke.

                Mine was pretty recent and will make everyone feel better! (though mine was not as expensive as most of yours )

                I have "burned water" twice in the last two months. No kidding. My memory has always been sharp, and the timer in my head unfailing. Well, there were 2 times in over the last 2 months where that was not the case!

                My only consolation was that I was heating water for tea and both pots were older and cheap.

                  Not bbq or grilling related, but there was that time I simmered about 16 quarts of my homemade turkey stock for thanksgiving for about 24 hours. Carefully checking and skimming all along. Then at last it was ready and I just needed to strain out the spent solids and return to the stockpot on the stove. So I put the colander in the sink and….

                  I left the damper closed on the fan of the controller. Couldn’t figure out why the temp dropped after initial ignition while the fan just whirred.
