    Is ash tree wood good for smoking ?

    Hello everyone !
    I’ve searched the posts and can’t seem to find the info I am looking for.
    so up here in the North East i have more dead ash trees and split ash then I could ever use.
    I use it in my wood fired pizza oven.
    is it good to use in a smoker ?
    I typically use apple , hickory
    i just don’t want to use it and find out it makes exspensive meat taste like crap.

    please let me know your thoughts.

    Welcome to the Pit! I've never tried ash wood myself, but Huskee is a proponent of using it for ribs, so I'm sure it's fine. Maybe he can chime in.

      I use a lot of Ash in my woodworking and have used the scraps in my kettle many times. Works fine. Very similar to oak.

      Yes, it works very well. Mild flavor, but very good. Go ahead and fire up that pit!

            Ash is my favorite! While it burns rather quickly compared to hickory, oak, and apple it has a great mild flavor in my opinion. It's my favorite for pork.

                Ash wood for smoking?
                I thought wood ask was a result of smoking. I could be wrong, but then, I am not from Texas.

                  Were those trees killed by the emerald ash borer? You can tell by a large number of oval-shaped holes throughout the wood and bark. If so, the wood density and quality may be lacking. I suppose if it burns cleanly then you're in the clear, but most of the ash wood here in Michigan has been completely ruined.

                  Yes all dead from the beetle. It works great for pizza oven. Only taken down about 150 trees lol
                  need a use for it.

                  I think I’ll try smoking with ash. I also live next to a 100 acre apple farm so he gives me apple wood for free as well.

                  Absolutely. Great smoking wood. Light smoke profile that makes it very versatile. It burns well when seasoned.
