      I use maple, apple, oak, cherry, and hickory. Maple is a good all round wood as is oak.

          Of the woods you mentioned I like Apple for pork, Cherry for poultry, and Oak for beef.

          That being said I prefer to use Pecan for pork. Hickory is also good with pork but it can be rather overpowering if used to excess.
