Thai Chicken Stir Fry with Basil - this was excellent! Haven’t made a Thai dish in a while, so liked the added touch of the fish sauce. And Also was the first time using a new oyster sauce to me, Lee Kum Kee. I had never seen this brand with a gluten free option. It was much better than what I’ve used in the past and had a much more prominent oyster flavor.

barelfly i love basmatic rice!! Costco has good stuff, 1.5 cups of rice to 2.25 cups of water in a saucepan with tight fitting lid done in 15 minutes after it comes to a simmer. It makes the best Spanish rice for tacos an burritos. It’s also my favorite when I make Thai food. The longer grains are so fluffy!! 🍚🔥🔥🐿️

So last night, I needed to feed a half dozen college students from our church that were here for a small group Bible study, and Yvonne and I decided it was time for me to bust out the griddle and do some burgers!
The griddle needed some TLC, as my cover has developed a leak and water was standing in one corner, but a few rounds of scrubbing and seasoning with a Crisbee puck got it back into shape...
1/3 pound smash burgers on the Camp Chef FTG900. Seasoned at the griddle with Meat Church Holy Gospel (kinda appropriate if feeding folks for a Bible study! Or is it sacrilegious?A preacher told me about Meat Church rubs....).
Going in for the scrape and flip after several minutes....
And boom! Crust!
And last shot... half cheesed up, the other half (bottom of the pan) uncheesed....
These 1/3 pound balls smashed into bigger and thicker burgers than my usual smash burger, but very very good! I may start going with that size all the time.

Andrrr it was an experiment - although in the past I have bought "burger" spice blends I used to use before I did smashburgers. I did it on a whim, rather than do my normal mix in of spices and salt at the grill, and am glad I did.

I started a Neapolitan dough yesterday and decided to form it into dough balls today instead of waiting til tomorrow as is my usual method. But I was too tired to go outside and fire up the pizza oven, so I decided to do them inside in the house oven. They were missing the extra crunch on the outside they would have had at a higher temp, but they were damn good anyway. The first pie wasn't painted with olive oil on the crust, but the second one was. Notice the difference in browning.

The one with oil has a better look, but I bet they both ate great!
I always use the oven, and now with two thick baking steels, it gets very close to a commercial pizza oven. I was looking at the wood ovens, and even making one. We just don’t cook enough pizza. The oven does a good job. Sadly no smoke tho.

A young couple at work have gotten engaged and are moving to the west coast. 👰🏻🤵🏻♂️ We had a farewell lunch for them today at the hangar. 🛩️
I supplied the protein. Since it was a lunch, all meat was cooked the day before.
Two brisket points, one flat and six racks of St Louies. The brisket had Caribeque Big & Bold Beef rub. 🐂 The ribs had a combination of what I had on hand. 🐖
I managed to fit all the beef on my Weber 26”, ten hours to probe tender
The ribs went into the PBC, first two came off at four hours the rest in another 30 minutes.
I catch the beef drippings during the cook. Separate the fat and use the rest with a little BBQ sauce to add to the sliced beef.
Seemed to be enjoyed by all.

These were cooked Panhead John style. Marinated in A1 & Worcestershire sauce then listed with steak and pork rub.

Lookin good my brutha! You might be tired of me sayin’ this but…….brush a portobello with Good Season’s Italian dressing made with balsamic vinegar, sprinkle with Lawry’s Garlic salt and a little pepper. Let it sit for 10-15 minutes before putting it on the grill. Best portobello I’ve ever had!
