    The girls left me Thursday night to attend a skating event. Foreseeing my newfound freedom, I pulled a duck breast from the freezer. I can't get the girls to try goose or duck. I call this Dave's no-yuck duck, and they still wouldn't try it. This may be the finest dinner I have ever cooked. And it was witnessed only by my dog. But we sure had a good time.

    The duck breast was seared slowly from a cold pan to render the fat. Once the skin was crisp, I flipped it and seared the meat side. It was pulled from the heat with an internal temp of 128ΒΊF /53ΒΊ C. I made a pan sauce with Sake, Miran, and Mandarin orange. My 'coin potatoes' started with two baked potatoes. I cooked them in the microwave and pulled them before they got soft. Then, into the freezer to cool before slicing them to a 1/4 inch, and frying them golden in a bit of canola. Before serving, they got a brush with the rendered duck fat, salted, and a pinch of fresh rosemary. The green beans were roasted in the oven with salt, pepper, olive oil, and a pinch of cayenne. The tomatoes went under the broiler to blister before being plated. Nobody but me to eat, so I took pictures as a record.​

      That looks great! My wife is going to be gone Wednesday. Valentines, but for me more importantly Ash Wednesday, with other meetings earlier, so I'm not going to be able to do anything like that. I'm very jealous!

    Our pregame Super Bowl Tailgating Party BBQ Extravaganza was a huge success today. The menu included:

    Brisket sliders with St. Elmo's Steakhouse Horseradish Sauce
    KC Style Brisket Burnt Ends with Gate's Sauce
    Jalapeno Poppers stuffed with cream cheese and brisket wrapped in bacon
    Cast Iron Skillet Dip with Fritos (Thanks Malcom Reed)
    Smoked Wings with Frank's Buffalo Sauce
    McRoy Rib Sandwiches
    Artisan Whole Wheat Flatbreads with homemade sauces and sausage
    BBQ Baked Beans
    Princess's World Famous Mac and Cheese (She's my BBQ Side Chick)

    It also turned out to be a beautiful day and some of our guests sat outside.

    Beef ribs finished an hour ago, and I couldn't even finish 1 rib after a bowl of beans.

    Beans have been on since yesterday at a slow simmer, half an onion and 2 jalapeΓ±os went in before bedtime. A full pack of sliced bacon was lightly browned at 8 am and went in with a few chopped clives of garlic. The other half of the onion and 2 more jalapeΓ±os went in around noon and a can of tomatoes went in at 2pm.

    I didnt want to wrap, but half the rack was close to 200 when the thick part wasnt even 170 so this is what they looked like before wrapping and a rode to 205.

      I had planned a day of bbq for the game, but plans got pushed, still managed to make a pizza

      Slow fermented naturally leavened pizza dough, homemade San Marzano sauce, a cheese mixture of mozzarella and Asiago, course ground artisan salami, Italian sausage, onions, green olives, and dusted with fresh grated parm.

      I had planned on cooking these on the kettle, but the day got away from me. So, into the oven they went and man they were good! Been a while since we have had wings and Kenji’s method is no fail, even with a much shorter rest time in the fridge!

      tossed half with Kosmo’s Nashville Hot and the other half with Kosmo’s Garlic Parm rub. Mmmmmmmm and French fries in that gadget I’ve never used prior to today, but I have to admit, that air fryer works pretty good!

      Sally is finally coming home from the nursing facility on Monday or Tuesday. So I made up some beef stroganoff.
      Used SRF wagyu chuck roast. The meat was tender after 5 hrs. on low instead of the normal 8-10 hrs.

      So tender and flavorful!
