    Day late, but here's Fri night's beef ribs from Creekstone. Cooked for ~10hrs on the kettle+SnS, Kingsford, with plum & apple wood chunks. Juicy & barkalicious.

    I'm calling this the poor man's pastrami. Last year our local store didn't have corned beef brisket. They were selling a corned beef round. Obviously, a cheaper cut but for the price I grabbed one and threw it in the freezer. I pulled it out the other day and decided to make pastrami. I followed the recipe from the free side of this site and used the rub recommended by Meathead. It didn't turn out bad. Much leaner than brisket but all in all it tastes like....pastrami,

      Looks good! I’ve made pastrami from round a few times and enjoyed it!

    Did a family trip to Italy a few months ago and in Rome my son became obsessed with cacio e Pepe and he asked for it last night so I obliged. Watched a bunch of videos online so felt pretty confident about it as long as I watched the heat in the pan. The “sauce” got nice and creamy despite being only pecorino romano and black pepper thanks to liberal use of the starchy pasta water (also cooked the spaghetti in a skillet with just enough water to cover). Took less than 15 min from the time I turned the first skillet on until I plated. So good.

    Served with some sourdough focaccia (took just slightly longer than 15 min!!)

      Sounds like alton browns recipe which h is my favorite. This is probably my favorite pasta recipe

      Sardines in oil with jalapeños. Imm game!

    We had baptism for our little one yesterday and we feasted afterwards! Skipmade pulled pork for sandwiches, my sister brought fruit, my sister in law brought veggies, my mom brought bars, I bought buns and chips, and made beans and pinwheels, and more bars. It was a nice little gathering.

    Tried an experiment with the leftover flan mixture I had from yesterday. I poured it into some muffin tins and let it go at 400 F until the toothpick came out clean.

    They deflated, but were decently tasty. (I mean, it is mostly heavy cream and parmesan with a hint of egg....of course its tasty lol.)

    New Year’s Eve Baked Brie… wrapped in puff pastry, topped with an Adriatic Fig spread, and baked until gooey and golden brown. Festive and delicious!

    Last cook in the books for 2023. I fired up the Weber kamado, smoked some king crab, seared flanken cut beef short ribs, and my potatoes.

    NYE dinner...Copycat Ruth's Chris New Orleans BBQ Shrimp over angel hair pasta....​

    It came out really good...I usually make N.O. BBQ Shrimp using a variation of Malcolm Reed's recipe. I like Malcolm's a little better, especially since the shrimp cook in the sauce and develop much more flavor.

      Looks great to me Jim! I gotta tell ya, you might not be much on chili makin, 😉 but you sure make a fine looking hot dog!

    I accrued enough reward points at CrowdCow to redeem for these two 0.35lb/160g A5 Wagyu strip steak segments, each about 0.5in/1cm thick. Dry brined them overnight and then cooked on a CI skillet at 450F/230C, flippity flip, with final IT in the high 130sF/60ishC, plated with Jess Pryles taters, killer shrooms & Os from my lovely bride, and broccoli. Absolutely spectacular, the wagyu beef was incredible, with that mouth-coating beefiness. We had our Veuve Clicquot champagne in the late afternoon, and will be taking it nice and easy for the rest of the year. Happy New Year to all!
