    This is my take on a recent Brian Lagerstrom video (https://www.youtube.com/watch?v=ZYzBiHYOULs). While he cooks the chicken in a pot, I did mine on the grill.

    His Indian-inspired spice blend is legit. This was perhaps one of the most flavorful Indian dishes I've had....and I made it myself!

    I readied the spice mixture (garam masala, chili powder, turmeric, cayenne, cumin) and the onion paste (onion, garlic cloves, ginger) ahead of time.

    I then grilled the chicken (just seasoned with salt) until charred and done. Here we are cooking away:

    The chicken is then chopped up and added to the simmering mixture of fire-roasted tomatoes....(along with some spinach!)...

    Once all of that is wilted down....plate it up....

    Made barelfly 's New Mexico Green Chile Stew Friday night and severely miscalculated the size pot I would need. It was a beautiful night free of mosquitoes and humidity - sorely needed. I loved the stew. Served it over chips with cheese and jalapeño shown here. Chipotle Tabasco was a very nice addition. Saturday I dropped two ribeye in the sous vide and seared them off on the Big Joe. Barely remembered to snap a pic. They were delicious.

      fzxdoc that is exactly my dear wife of 39 years philosophy. Why use an 8 qt pot to boil water for pasta when a 4 qt pot should be ok? Followed by "how did that pot overflow and why is the pasta sticking together"? It has made me the King of stovetop cleaning with a big shout out to self-cleaning ovens !

      A+++ as usual. Nice plate of ribeye [mouth watering] and green is Linda's favorite color.
      I had green chile when I was in New Mexico and California. So my experience is limited. Very different in some particular locals.

    What do you do when a hurricane might hit you? You make sure you’ve used up all the pellets in your Yoder so they don’t get turned to mush.       ericsnell Click is an American wagyu ranch in Texas which has discontinued internet sales. They had great product and service, but problems with packaging and shipping. Their prices were also very competitive plus they gave Pit members a discount.

    Got a pork loin on sale and cut it into chops. Cooked some chops last night. ~5hr dry bring then midyett rub. Came out delicious and juicy.

    Served with smoked duck fat fried potatoes, and zucchini.

      hoovarmin my weightloss stalled out week before last (hard to loose weight taking employees in NY out every day for a week) but is back on track. No, I ate none of the cinnamon rolls, those were destroyed by my wife and 4 kids.

      Beautiful place you have there. Nice husky. We had a husky mix stay with is for two years while the owners "relocated". Must have been a hell of a move... Tyson is his name. He stays with is for the day sometimes. My daughter's boyfriend has a husky pup who is out of control.

      I take it you like stuffed olives?!?

      Allon The Husky and the bull terrier are guests for about a week and the other Amstaff went home yesterday. This Husky is very well behaved.

      My girlfriend reached for the long cocktail picks yesterday as I made the drinks she put together the garnish.

    Smoked Orange Chicken Thighs with Garlic Butter Smashed Potatoes!

    Marinated some boneless, skinless chicken thighs with some orange zest, smoked paprika, garlic salt, pepper, olive oil and orange slices. Placed in the smoker at 350°F for about 45 minutes. Parboiled some small potatoes for 15 min, smashed, seasoned with Garlic Butter rub & placed in the smoker for 20 minutes at 425°F. So Good!​

    Some might call me old and boring. I personally think of myself as a mature traditionalist! With that said Sunday dinner is normally a chicken and fixins dinner.

    Tonight I did a spatchcock fryer that soaked a few days in a marinade/brine of olive oil and my rib rub, potatoes roasted with onions, Lawrys, black pepper and a Caesar Salad.

    I used a little post oak on the bird so I commandeered my daughters Master-Touch to do the potatoes so they didn’t get the smoke.

    All in a just a normal Sunday dinner with my girls. We have a hard and fast rule that no matter how busy life becomes Sunday dinner is not missed. Over the years that’s meant lots of dinners with nervous boys but dinner is a constant even if the boys have changed!

    Well we just returned to paradise on the Gulf coast after 3 months in the mountains and it appears that something has upset mother nature……so we decided to offer a sacrifice of some deep water royal red shrimp and top water ahi tuna as an offering of peace to mother nature. I take special notice that Ian only lacks one letter from the storm that took our home 18 years ago, we call it the storm that cannot be named, you will have to look it up…..hope our offering turns the storm into the middle of the gulf and it dies a lonely death.

    Cut a whole bird in two and did a comparison between the SNS kettle and the Weber Spirit gas grill, both 2-zone with a sear at the end on their respective rigs. Both were great. The one on the gasser was noticeably juicier, but the one on the kettle had a better flavor, having a bit of smoke from a small chunk of apple wood on the coals. But the one on the gas grill tasted excellent as well, it was a subtle difference (only a 90 minute cook).

      HotSun , not sure that color diff is real, may be an artifact in the photo. We were hard pressed to see much difference on the plate. Wasn't sure how much there'd be with a short cook like this.
