      That book is very solid. Pay attention to his small details. His attention tho them is in pretty incredible. He has heavily influenced my path in pizza.

    Grilled a couple pork tenderloin for sandwiches during the week and chicken thighs for tonight.

      I took it off at 203 and put it in the oven to rest while I made ribs and it didn’t want to pull apart at all. I had to chunk it up. Kinda disappointing

ID:	1284722 Pork belly burnt ends today. Malcom Reed recipe. Used my favorite rub, braised in brown sugar honey and butter, and finished with Bob’s Bitchin BBQ Honey Chipotle bbq sauce. We were hungry so no pics of the plated goodness. Yum yum yum.

      Some t bones smoked almost 2hrs at 185ish until 130 IT. Rubbed witheatheads beef rub, the microwave broccoli is sprinkled with Red Robin seasoning (cheapest rub you can buy, next time you pop in for a burger).

        Wow, looks delicious. I know my DW would love that plate.

      Spur of the moment Hatch chili rellenos. Stuffed with some taco seasoned ground bison and Mexican blend cheese. Batter is a beer batter. I'm out of red enchilada sauce so I raided the freezer and settled on some cheese and horse radish sauce from Cowboy Kent Rollins' recipe for Cowboy Cheese Steaks. Interesting combo but good. Pictures are an afterthought, I already ate one before taking pictures.

      I brought some pork belly burnt ends home Sunday night, so they became bacon and eggs and a burnt end sammie.

      Ling cod from Sitka, steam rice, tomato, cucumber, avocado, basil salad. not the most exciting picture, but a tasty meal. The cod was grilled with olive oil and my friends homemade citrus pepper blend.
