    Butt and Brisket, WSM and Pellet

    I'll be participating in my second comp in a few weeks. I received a pellet smoker (a CampChef Smoke Pro) this past Father's day (to go along with my Smokey Mountain) and I'm trying to map out how I'll do things. Last time, I tried doing both my butt and my brisket on my 18.5 WSM. We had two of each and it was a bit of a struggle to fit them in so I was thinking that I should divide things this time between both smokers.

    I've found the pellet seems to give less smoky flavour so I was thinking that the brisket should go on the WSM. However, the pork butts are a little more forgiving to cook so I was wondering if the brisket should go in the more controlled pellet smoker.

    Any thoughts one way or the other?

    A few thoughts for you .....

    first - Harry Soo competes, and wins, on a WSM 18.5.
    second - CandySueQ competes, and wins, on a pellet smoker.

    In other words, you should be able to do well on either one. Technique will be more important than the cooker itself.

    That said, I would lean towards cooking the brisket on the cooker you are most comfortable with, since it is much less forgiving than the pork butt.

      I like my pellet grill and find I can get a bit more smoke if II start with colder meat (partially thawed, but not complete) and set the smoker for 180F for the first hour or so.

        You can always split the cook! Start on the WSM and finish on the pellet cooker. Just cook one brisket, then you've got no space issues on the 18 WSM.

          I find my brisket comes out moister on the pellet smoker than the WSM. Maybe start smoking the brisket on the WSM for an hour or two then move to the pellet smoker?

            Agree with ecopower. I am similar to you Jabostick,

            1 campchef and 1 offset vertical for me backyard sizes.

            I cook my brisket on a campchef. I love the consistency. FYI Smoke from my campchef has always shown a great ring but less flavor, which I kind of like for a brisket.

              We aren't, 2/3 of Lewis and Sons are unavailable so unfortunately we can't participate.
