Also, just like a new Webber or PBC they all tend to "leak" smoke when new until you get a nice layer of gunk built up. If you can control temps, don't worry. Be happy!
I usually dont roll with 3 probes setup to measure ambient but I found this one where I did. You can use it as a comparison. The setup was a 5 hour cook @ 325 degrees. It was one of my first cooks so with all the gunk build up i'm not sure if the readings would be different now.
Basically the far left probe averaged 300, the middle 325 and right side near the fire 350. The most stable was the middle because that was the one controlling the drive.
If I cook L&S I just try keeping the temps between 225-275. With this data all I have to do is setup the ambient probe on the left, set it to 225 and I know the entire indirect side will stay below 275. Rotate the meat halfway through...good to go.

Anyone have experience with the PK360 graphite vs original aluminum? I really like the looks of the graphite, but if it is just going to scratch extensively over time, I’d rather go with the original and be done.
I know this is super late here, but I've been a graphite owner for the past year and a half and no scratches to be seen (cook about once a week on it during the good months here). Looks badass!
