    Asado Grills

    Anyone have experience with an asado or Santa Maria grill? They look like a perfect solution for varying the temperature and cooking over an open flame (such as reverse sear by being able to move the food close and far away.) I've noticed a number of new and popular restaurants with these grills burning oak chunks. Basically a bed of wood/coals with an adjustable grate controlled by a pully mechanism with a large wheel you turn to adjust the height.

    We've been cooking on our Santa Maria grill for several years. Absolutely love it, and you will too. Nothing like cooking over a live wood fire.

          Highly recommended. It’s easy to cook on, and the possibilities are endless. I built a Santa Maria accessory for my kettle, and I have also built a Parrilla. Great tools for both low n slow (low direct heat) as well as for high heat searing.

            Troutman did a nice write up on the Gabby's Grill SMG attachment for the Weber kettle. I'm ordering one and gonna get a used kettle off of craigslist. I've been waiting awhile to do this but the MCS has reared it's ugly head.

            As my MCS list grows I'm finding it increasingly difficult to knock things off of it :(. Although not of highest priority, I've been eyeing a Santa Maria style grill for over a year

            I've been jonesing for an Uruguayan grill set up ever since I procured wood for my offset. But yeah, a Santa Maria or Argentinian set up would be sweet as well.

              Attjack and Bkhuna looking at that Titan Outdoors, the photos sure make it look like it is NOT conventional expanded metal for the cooking grate. It looks kinda wavy and thin in the up close photos. The Gabby's grill cooking grate APPEARS to be a thicker expanded metal, and at least appears to be stainless. Never heard of nickel plated expanded, so pretty sure its stainless expanded like on my 37 year old offset's cooking grates.

              I just feel in looking at pictures that the Gabby's Grill cooking grate ought to last much much longer than the other grate, and hold up to flames better as well.

              I could be wrong though... and if Attjack has this one, he can tell me if I am wrong. I'm just looking at limited pictures online.

                The Titan is definitely not stainless and relatively thin I suppose. I keep it oiled and covered. If it ever wears out I'll figure out how to replace it with a stainless grate.

              The only complaint I have about the Gabby’s grill accessory is that it doesn’t come apart very easily and is therefore difficult to clean. I think the Titan has a better release system if I’m not mistaken, which would make the grate easier to clean. Other than that I think either accessory works really well.

                I had one made locally in June 2020. Cost was just shy of $900 I believe. It's built like a tank and fun to use for sure!
                Picked up my custom made, fully welded Parrilla Grill today! This thing is a BEAST. I sincerely thank Zeb at Southern Raines Customs for this beautiful tank of a grill. He even made a coal shovel so I can manage the heat. Parrilla is an argentinian type of live fire cooking. You start with small splits of wood in the cradle on

                  I purchased a Grill Works Assado. All stainless. It is sitting in my garage right now waiting for my patio to be built this Spring. Pricey but very very well built.

                    Here is a thread where I had my MCS stoked and made the decision to buy the Grill Works. AZ BBQ was a very close second. Gaucho Grills was an option as well. The Englebrecht can do it all.

                    Help me decide on one of these three: Grillworks 36" with Brasero Stainless Steel - Most expensive can't be converted to covered grill. Shipping and crate fees are crazy.                       If you are a COSTCO member, they go on sale in select California stores; Usually in the Spring. You save $100 if you go that rout.

                      I strongly suggest buying the charcoal/wood raiser. It really helps with airflow. Then if you want to beef it up some more (pun intended), GrillGrates fit perfectly. I was going to buy their Argentine grates but the darn things cost most than the BBQ.
