If it’s running too hot on direct maybe try with the regular grates? Should be pretty responsive to lowering the charcoal tray while I wonder whether the grillgrate stays hotter even when you lower the tray because the hot convection current is getting trapped under the grillgrate.

I know it's been a few years, but hopefully someone will see this. I got my 357 Pro last year, but only used it once before Mother Nature started dumping snow on us in New England.
I've used the grill 3 or 4 times this spring and I'm loving it. They seem to have improved the sealing of the hood with latches that pull it tight - no leaks.
My problem is that it's become almost impossible to lift the cover. It goes down easily enough, but I have to fight to get it open. Any suggestions?

First, welcome to The Pit.
Second, I don't have that cooker, but it sounds like there must be some sort of hinge. Is it possible that the hinge has rusted? I would normally suggest something like WD40, but I don't know how temp sensitive that is, and I don't know if there is any way that could make it's way into the cooker.

If the hinge has rusted, treating it with a penetrating oil will be more effective than plain WD40. You can find it (many brands) at your local hardware store or on Amazon. WD40 actually makes their own version of a penetrating oil.
However, I would guess that the hinges are a stainless steel that should not rust. Even if stainless steel, they will benefit from being lubricated.

Looks like that unit has a scissors type hinge system. You might try spraying the contact points with food grade silicone to see if that helps. Note that the spray is good up to 425* but that might tell if the hinge is binding. The other thing you could do is call HastyBake @ 800-426-6836.
