    It was 75 degrees in metro Atlanta today!

    So naturally I had a fever to get something going on my PBC today. I went to my local Publix and picked up a small pack of boneless pork loin country ribs. I liberally dusted them with Memphis Dust and let the fun begin!

    After two hours in, I put them in a foil pan, poured in a bottle of Miller High Life, covered with foil, and let them braise for another hour.

    i pulled them off and they were fork tender.... like buttah! Enjoy the pics, although me and the wife enjoyed them more eating them!

        T'was mid 70's here , as well. 64° when I got out around 0600.

        Jus' went ' HV, ~2000, t' catch th' last night of last week's sales prices. Bought 4 Family Packs of boneless pork loin country style ribs @ $ 1.99 / lb.

        Hope I kin' make 'em as nice as yers!!!

            We set a recod a for highs in the month of February in Dallas, TX. Cooking has bee lots easier than it was in early January when the temp dipped to 17F.

                    I'd kill for that temperature, it's -8 C (about 17 F) here today and I'll be doing my first cook on the PBC! 2 racks of back ribs and 2 racks of sides. Probably a chicken or two as well if time allows.

                      Wednesday was 60 with tornado warnings in the morning and high wind warnings for the day. Yesterday low 20's and 3 inches of snow. Gotta love it

                        Was most of the fat rendered and the connective tissue softened in that 2hour-smoke+1hour-braise method, DJ DeSpain , or were there still significant amount of both?

                        Your photos look fantastic. I bet that was a tasty dinner.

                          I was working from home when I did these, and at two hours I checked the internal temps and they were averaging 185.

                          So I put them in a foil pan, tossed in a can of light beer and hoped the braise method would work out. Turned out better than I probably deserved them to on the temp overshoot.

                        It's currently 34F at my house, with temps going down, not up, and snow forecast for the afternoon. In Feb we set a record for most rainfall ever recorded and lowest average temp for the month of February. I wouldn't mind a few degrees sent my way from Atlanta and Dallas!

                          T'was 50° F here at 0620 when I first went outside, headed fer 70°!
                          Thursday morn? 17°. Friday morn? 19°. Sheesh! How ya s'posed t' dress lately?
                          Dryer than a popcorn fart, here in th' Great Plains....
