    SRF Brisket cook

I smoked an SRF Black Grade brisket yesterday. 16.9 lbs trimmed down to about 11 lbs. So rich, so, juicy, so flavorful! A 9 hour cook with a 3 1/2 hour hold in my Breville Smart Oven.

Best bark I've ever had. Great fat render.

Looks like a great cook here. I’m curious how much meat you ended up with after the cook?

I couldn't tell you. I figure about 40% loss from cooking. About 6 1/2 lbs, but I'm guessing.
