Hey all,
This is Ben from the DMV (DC/Maryland/Virginia) area. Just wanted to say hello and thank you all for your help (even if you didn't know you were offering it) during the first few months of my PBC adventures. Just moved and finally had the proper outdoor space for a smoker, so got a Weber Genesis II and a PBC for my smoking needs.

Have had some early temperature struggles (the pit kept wanting to settle around 220 degrees or so, which was making cook times longer), but I've had more success recently following the fzxdoc methods to a T.

Finally feeling like I'm hitting my stride, here's a photo of the Thanksgiving turkey, some SRF beef ribs and the kill2grill al pastor.

Those are great photos! While I don't have a PBC, I am never less than amazed at the advice folks give here for fire management and temping on such a wide variety of cooking implements. You have an issue...someone has a solution.
