      Smoked for a bit then sliced and fried on the hotplate some pork shoulder for the few staff during the day. Have 6 briskets cooking at.

        The ambassador is from San Antonio and came by to check it out. Got the thumbs up for a small taste test even though the brisket wasn't done.Rest of the embassy staff are arriving later.

        There were bbq fans from Texas raving about it. Coming back 3-4 times for brisket. Back home now and need to get cleaned up for the bbq class Sunday. Now the embassy are wanting me to cook for 900 on 4th july.

          Now this is cool! I made a pitch to my employer to provide some equipment that I could use for "diplomatic BBQ" (my job involves protocol and international stuff)....but it is unlikely it will happen.

          Oh well. They don’t know what they are missing out on. I could do some stuff given a budget for equipment of my choosing

            RonB it’s more complicated. First there would be the matter of how to budget it. I work in the public sector so it isn’t as easy as "because just do it". Second I work at an airport so there is the matter of where to put this thing that creates fire and smoke. And then the matter of who cooks. It isn’t in my job description, so I can’t just do it. There would be food inspectors and the process to obtain meat, a whole mess.

            Glad you were a hit. Not suprising at all. Congrats. I do have a question about your rig. On one side is a vertical unit. Is that the firebox for the two smokers on either side, or is that a vertical smoker. Thanks

              It is a brasero for burning large chunks of wood or carbon. Throw the wood in the top and halfway down is a heavy grate with large spines where you move the handle to knock the wodd and coals. From there shovel it out the bottom and into the parrilla which is on the front of the trailer. On the right side rear is a reverse flow pit.
