I have decent knife skills, but I often find myself often getting mad at other people's house, or rented apartments and such. Out comes the case trapper from my pocket that is always razor sharp (the old carbon steel ones). When I get odd looks I just say "don't worry, it's clean, I wiped it on my jeans"
After many moons of cookin at my friends houses I have learned a very valuable lesson. Solution: I bring my own knife /knives along with my thermapen. I stopped tryin to educate & just shut up, git my knife(s) out & git to work. The World has no clue on good knives & even less on care & sharpness.
