    I've ordered the short ribs as previously mentioned. Should arrive Thursday. How many days to thaw? Anyone's experience is appreciated.

      1 to 2 days to thaw. Another day to dry brine. Then smoke them babies! Twelve-ish hours at 225F in my experience. YMMV

      I got my short ribs on Friday. They took the full 3 days to get to me and were still frozen. I left one package on the counter and was ready to dry brine them right before I went to bed that night. I smoked them yesterday, two four rib plates per package.

    I’ve carted the short ribs and the strip loin three times, but can’t pull the trigger.

    Anybody on the fence about the short ribs, get them at a great price before they’re gone! You won’t be sorry. I received mine on Friday and smoked the first package yesterday. Two four rib plates per package.

      Those bones are great for bone broth/stock, too. Cut ‘em in half with a sawzall!

      Just arrived, in cryovac and ice. Now they are in my fridge. Going to have to wait for the weekend before Thanksgiving. Will get a few people together and do ribs and a bunch of BBQ sides :-)

        Please let us know how they turn out low and slow. Bought a few packs but so far have just cooked them fast as Korean bbq.
