ETA: Both meats are prime and shipping is included for orders over $150. I spent an extra $20 to get second day delivery vs the standard three day delivery time.

Depending on ambient temperatures and delivery service, it’s a crap shoot. I paid extra to get a quicker delivery. There is no guarantee, though I’d bet Creekstone will stand behind their product should the product arrive "too warm". I’d rather not waste the meat even if I am "made whole" in the end.

You know what, that price for the Chuck short ribs isn't that bad compared to what they cost locally. That's about $10 a pound, locally they're about $9 a pound. St Louis cuts work out to about $7 a pound. Here full spares like that are about $5 a pound. They're not full spares including the breastbone, but they do have the tips.
I'm torn on the St Louis cuts. I still have some that I got from Compart. The thing is, here in Pennsylvania I get Hatfield ribs, and they are really really good for the price.
Just thinking out loud, I could get myself a gift certificate, tell her that it is from work, and then show her that it should be used while stuff we like is on sale....

Mosca I have 4 racks of SRF Kurobuta that are St Louie at 1.25lbs or so and they seem puny for the price. I’m gonna cook those on Wednesday. I will reserve judgment on them until I eat them but man that are tiny.
these Creekstone ones seems huge as compared.and SRF are at 25 bucks each.

Snagged an order of the beef short ribs .... that price is very good. My local butcher carries Painted Hills beef (very comparable to Creekstone) and their plate short ribs are $9.99/lb.
I agree on price, anywhere from about $8.50-$11, depending on final weight. They are $10/lb locally where I live. I'm in for three packages of the short ribs for free shipping.
My freezer is so stuffed from past sales everywhere. I’m glad the flank steak sold out as it made the decision to pass easier. Looks like sweet deals though.
I almost got some of these, but then realized the deep freeze is full to the brim, and I’ve overflowed to two top freezers in the garage fridges, so I need to reduce my inventory before bringing in another big hunk of frozen meat.
I just wish I could find short ribs locally. Sam’s has the flanken cut with little meat in them, Costco doesn’t have them at all.

Mosca I figured that could probably happen. That said - the one time I did kalbi using the flanken cut ribs from Sam's, I was not pleased with the huge amount of fat in the ribs. More fat than actual edible meat in those, and they did a good job of hiding that in the way the tray was packed and presented.
Of course, kalbi is a quick cook, versus a long low and slow that gives fat time to render, so that could make a difference.
jfmorris I’ve only ever done them in my Instant Pot, where they have been spectacular each and every time. I think that sometimes they will be fatty, and then a week later the selections may be leaner.
I was looking through their cases, and the guy came over and said "What are you looking for?" I told him short ribs, he asked what size, and he came out five minutes later with a dozen nice ones.
