    (The brisket tends to be Choice, but not always.)

            prices we can only dream of up here, I brought a brisket for $3.99 a lb a few weeks ago, ran like a thief in the night

              My wife and I passed on brisket that was on sale for $2.99, thinking that wasn’t a good enough sale. In Texas, $1.99/lb (or less) happens at most grocery stores in May (Memorial Day), July (July 4), and September (Labor Day).

              Not just any HEB will do, though you're in a high population density area so would be more likely to have this offering if available. In our more rural area, the same St. Louis ribs are "on sale" at $2.49 and the brisket is at regular price (around a couple bucks higher per).

                My wife would murder me. Already have a dedicated meat freezer which i organize once in a while just to create space to add more. Ive sworn to myself im gonna cook through it before buying more but it never happens.

              After smoking my first USDA prime brisket
              I’ll probably never smoke another choice brisket ever again. USDA prime is almost fool proof.
