      Guys! Spinaker has a whole (maybe several) thread about refinishing cast iron. It’s incredible. And, I believe, meathead saw that and asked him to be a moderator. His knowledge is…VAST. Maybe he’ll link it. Actually, I’ll bet it’s stickied.

      Michael_in_TX yep, it works fast. I stripped a piece of CS accidentally when I added lemon juice into the butter I was melting in the pan LOL

    Ok, my last cook post in this thread, yea right. Chicken thigh and potatoes. I neglected to mention, I Sous vide the thigh at 160 for 3 hours. Ice bath 30 minutes and sat out seasoned with Cowboy Crust. Tatars similar to yesterday. In pan about 10 minutes flipping every 2 minutes or so. I'm very happy with the moist perfectly cooked and great taste. Easy cleanup.

      Reality has set in. I'm taking a break. I pulled out a beef back rib from a recent cook. That and some starch for a side. Christmas day our traditional Chinese take in which will lead to leftovers for a day or 2. New Years, oh yea.

    With a bunch more cooking on the De Buyer 12.5” and the Made In 12” … this is what they look like now …. Yeah, darker than cast iron, and smoother

      Good carbon steel pans are an absolute joy to operate or rather cook with. Thank you for helping trigger an expansion in my cookware.

    I have two DeBuyer pans, a crepe pan and the one you bought, I love them both and have had them 20-years. I also use restaurant cheapies for small tasks, a 7” and a 9”. I paid $7 and $9 CAD at Costco Business Centre. They aren’t the same quality of course but do the job very well.

      It is my daughter's fault. She introduced me to Facebook Marketplace.
      Then the lunatics here went wild re carbon steel.
      So I ordered a 3 Nail skillet 2 days ago.
      Then, today, I see on FB, local de Buyer skillets. I already have a 12.5 standard model (a brute), costing $4.00.
      She had that one, the 11 inch, and a 12.5 deep skillet (4 aches deep).
      Turns out they had bought them 5-6 years ago, and she prefers her nonstick gear.
      So I took the 11 and the deep skillet for $120US.
      They are barely used, will benefit from more seasoning .
      Economically, these 3 that I now have amortize out at $80/per.

      Is there an AR Intervention Team?

      The skillet saga continues. Will pick up the 3rd pan today (12.5 inch std skillet). $50.
      Will throw out a bunch of stuff at cabin.

      The way this breaks down, money wise, is $4, +50 +50 +70 = 174. Works out to $43.50/pan. Kind of fancy, but not embarrassingly so in my view.

        Seasoned the new to me pans yesterday. The de Buyer site has lots of info, and a fair bit of history. Do not look at their copper pans!
