Yeah, I'm hooked on carbon steel. To the point where I foresee it replacing almost everything I have done in the past with cast iron skillets and griddles.
Nine bazillion people on YouTube rave about DeBuyer, so I thought I'd get one and compare it with the Made In carbon steel.
This is a super high quality piece of cookware. Definitely another lifetime purchase (plus I got it on sale!).
It is also significantly thicker and heavier than its Made In competition. The carbon steel is 3 mm thick, not 2 mm. The handles are much heavier and thicker, although also more ergonomic. This adds weight, for sure. It also means that the pan takes quite a bit longer to heat up than the Made In pan. I don't mind that, but need to be aware of it while cooking. Getting to 350F takes about 5 minutes instead of 3 on my most commonly used burner with the flame running at 5.
So far, I have seasoned the pan and then cooked bacon, followed by fried potatoes. No pics of the bacon or potatoes, but I do have pics of the seasoning process. It was pretty easy and worked well. Haven't done the fried egg test yet.
The Matfer seasoning approach (which I learned on Uncle Scott's Kitchen)
1/3 cup canola oil
2/3 cup kosher salt
Peels from 2 potatoes (and then you can fry the potatoes for your first cook)
Get the pan hot (like 350F), then add oil, get it hot. THen add salt and peels and mix together well. Stir and move around the pan occasionally for about 10 minutes. Toss the salt/potato/oil mixture ..... do not toss into your trashcan with a plastic bag until it is cooled off. Otherwise, you melt the bottom out of your plastic trashbag like I did
..... Wipe the pan clean, then lightly oil while still hot if you aren't going to cook in it right away.
I appreciate the "Fragile" sticker so that FedEx hopefully treated it nicely. But the contents of this box are 100% the opposite of "Fragile"

I loved the high quality packaging and the fact that there was no styrofoam or plastic involved.

It comes with a beeswax coating, which you can see and feel very clearly. Well protected from rust.

Washed the beeswax off with hot water and soap. Took about almost 10 minutes to get to just steel. You can see just how big this pan is!

Seasoned using the Matfer approach of canola oil, kosher salt, and potato peels. It works well on the 3 carbon steel pans I've done it with so far.
