    New pan - DeBuyer Mineral B Pro 12.5"

    Yeah, I'm hooked on carbon steel. To the point where I foresee it replacing almost everything I have done in the past with cast iron skillets and griddles.

    Nine bazillion people on YouTube rave about DeBuyer, so I thought I'd get one and compare it with the Made In carbon steel.

    This is a super high quality piece of cookware. Definitely another lifetime purchase (plus I got it on sale!).

    It is also significantly thicker and heavier than its Made In competition. The carbon steel is 3 mm thick, not 2 mm. The handles are much heavier and thicker, although also more ergonomic. This adds weight, for sure. It also means that the pan takes quite a bit longer to heat up than the Made In pan. I don't mind that, but need to be aware of it while cooking. Getting to 350F takes about 5 minutes instead of 3 on my most commonly used burner with the flame running at 5.

    So far, I have seasoned the pan and then cooked bacon, followed by fried potatoes. No pics of the bacon or potatoes, but I do have pics of the seasoning process. It was pretty easy and worked well. Haven't done the fried egg test yet.

    The Matfer seasoning approach (which I learned on Uncle Scott's Kitchen)

    1/3 cup canola oil
    2/3 cup kosher salt
    Peels from 2 potatoes (and then you can fry the potatoes for your first cook)

    Get the pan hot (like 350F), then add oil, get it hot. THen add salt and peels and mix together well. Stir and move around the pan occasionally for about 10 minutes. Toss the salt/potato/oil mixture ..... do not toss into your trashcan with a plastic bag until it is cooled off. Otherwise, you melt the bottom out of your plastic trashbag like I did ..... Wipe the pan clean, then lightly oil while still hot if you aren't going to cook in it right away.

    I appreciate the "Fragile" sticker so that FedEx hopefully treated it nicely. But the contents of this box are 100% the opposite of "Fragile"

    I loved the high quality packaging and the fact that there was no styrofoam or plastic involved.

    It comes with a beeswax coating, which you can see and feel very clearly. Well protected from rust.

    Washed the beeswax off with hot water and soap. Took about almost 10 minutes to get to just steel. You can see just how big this pan is!

    Seasoned using the Matfer approach of canola oil, kosher salt, and potato peels. It works well on the 3 carbon steel pans I've done it with so far.

      Thanks Don! I used the Matfer method with the Made In pan and it worked really well. So, figured I’d do the same thing with the De Buyer ….. I’ll post a quick pic of how it is looking after cleaning, first seasoning, and 2 cooks …. Potatoes and bacon were the 2 cooks.

      Very nice pan! I’m like you…I am at the point that I only use CI or CS pans for cooking. The new one I picked up this past week cooked like a dream for its first cook. Excited to use it more.

      but love seeing the various pans you have picked up the last month!

        The Made In Stainless stuff is great for all sorts of things, but if you want high heat …. CS or CI is the way to go.

        And the more I’ve been using this LG gas stove, with the really high heat it can generate, the less I’ve enjoyed cookware that can’t handle natural gas

        it's definitely more comfortable than the Made In CS handles. Downside is how heavy the pan is.

        I am thinking about adding a couple of smaller CS pans as well. This one is great for big cooking, but not at all convenient for something like frying an egg

            I don’t have a lodge carbon steel …. As far as Made In … the DeBuyer is 3mm thick and the Made In is 2.5mm … this definitely makes a difference in both how long to heat up and heat retention when you put a big hunk of meat in the pan. But it also makes it heavy. This thing is comparably heavy to my big CI skillets.

            Tagging on to that … I like the Made In for how easy and fast it is to cook stuff at high heat. What I don’t like is that it cools off fast with big chunks of meat and then I have to get the temp back up.

            For the DeBuyer, it’s like CI in terms of heat, retention, and weight. And much better on non-stick factor in my opinion.

            What I’m really looking forward to is getting the DeBuyer on the Hasty-Bake and cooking a steak and fried potatoes.

          So, the Pit thinks I may be ok at $12 for a de Buyer 12 inch skillet purchased at an estate sale early this year?
          (Hate to pay more than a buck an inch.)

            At time of purchase, was not familiar with de Buyer; but the quality, heft, and seasoning triggered purchase without even resorting to smart phone google foo. I like my 2 Lodge CS skillets. but this big boy is serious.

            The DeBuyer a serious pan. It's like you need to go to the gym and lift heavy just to be ready to use that sucker!

          A few months in, using it when I would choose to use cast iron, instead I go to the DeBuyer …. Holy crap, this thing is a monster. I don’t use it daily, but when I’m cooking a steak inside, or doing a couple pork chops, cooking sausage, anything where I want high, constant heat and oven capability, I break out the DeBuyer. And it never fails me.

            Very nice. 2 years in and I’m very happy with mine. Rock solid performer.

            Here are my main reasons why I will pick carbon steel over cast iron any day:

            1. Much lighter weight-wise compared to CI, but still solid
            2. I absolutely love the smoother surface.
            3. Usually cheaper. The De Buyer is the same price as a cheap non-stick pan at Wally World here in Sweden.

            Hard to beat
