    Adding some thoughts to this ….. the carbon steel cooks like well seasoned cast iron, but it is considerably lighter. The angled sides make it easy to maneuver a spatula in and out of the pan. It cleans up very easily. For whatever reason, I feel more comfortable about hot water on this than cast iron while I’m cleaning up. I still think that cast iron is the best option for frying potatoes! Thinking of doing a side by side cook off between my fave cast iron and this new carbon steel. Like two NY strips cooked side by side to medium rare. Nothing fancy to it at all. Just cook and flip until 130 and then let them rest for 5 minutes and test.

      And here's what the 12" Made In Carbon Steel frying pan looks like after 2 1/2 years of cooking with it, one strip down and re-season, tons of steaks, bacon, eggs, fried potatoes, hashbrowns, gnocchi in browned butter, potatoes fondant and much more. It's been on the grill, the stove top and in the oven at least 2x weekly. It is my go to pan as long as I'm not cooking a tomato or citrus based sauce.

      Oh, and if you want fairly light, robust carbon steel like this, but aren't happy with Made In's change to a Swedish manufacturer ...... the Made In stuff back when I bought it was still being made by De Buyer. Buy De Buyer's Blue Carbon Steel, it's the same thing.
