Eat Well and Prosper! From a Backyard Cremator in Fargo ND, Dan
Friends,
Many thanks for all the encouragement and celebratory remarks! I had hoped to to have a meal or two under my belt by now but Mother Nature keeps dumping snow with single digit temperatures so I will be patient for a week or so. I was at Costco over the weekend where my Mrs. found me fondling ribs, packer briskets, and pork shoulders--think I'm experiencing smoke withdrawals!
For the hearty cold weather BBQ'ers out there, by means of an explanation, my sliding rear deck door does not open wide enough to accommodate the WSCG and my 7' high fence gate is frozen shut so I can only dream about the meats (and pizza) about to be prepared on this new cooking tool.
I received a Weber Summit Charcoal Grilling Center as a 10 year anniversary gift 2 weeks ago. I have been cooking with an ancient 18.5"grill and an old late 1980's 18.5" WSM that had been tossed around in more than a few wind storms (hopelessly leaks air). I have to say the most amazing thing about the WSCGC is the temp control and speed of start up and cool down. With the gas ignition, it is up and running nearly as fast as a gas grill and much cleaner and neater to deal with than my other grill and smoker. When you shut the dampers down after cooking, it will extinguish the coals in no time and cool the coals to the touch in about 90 minutes. The charcoal consumption in winter is so much less than a typical grill/smoker it's astounding, and the temp control while smoking even in 0F temps with a breeze is as good as the WSM on a good day with a temp controller. The price is crazy but I truly think this will be the last grill/smoker I will ever use. The side table with the charcoal bin, extra rack hangers, etc. seems pricey considering what it is, but no longer am I searching around and setting greasy hot grates, water pans, hot food etc. on other tables or shelves, everything has it's place and is very handy.

Congrats on your fantastic purchase, Flying Fur . Wow what a great price.
You're going to love that grill/smoker. I agree with everything that Jim Doyle says in his post. The temperature is rock solid. Cleanup is easy. It gives you a lot of control over your cooks. The food tastes great. Plus it's a versatile smoker/grill combo, allowing you to grill steaks and burgers one day and smoke a killer brisket the next. I still use my Weber Summit gasser for some things, but the WSCGC is almost as predictable in its temperature response.
I also paid to have it assembled and delivered, which probably saved my marriage, since DH wasn't sure that I even needed the thing, much less that I might need an extra pair of hands while assembling it when he'd rather be watching football. Seriously, though, it was great having it come ready to go. It fed my instant gratification, well, instantly.
I love mine, and I love the attached table and storage that came bundled with it (the WSCGrilling Center).
All in all, it's a dynamite smoker. Have lots of fun with it!
