    Smoked Meatloadf on the Weber Summit Kamado

    Been too long since I smoked meatloaf. I used Jess Pryles’s recipe. Used Weber briquettes on the bottom grate with some pecan chunks. Turned out fantastic! Probably the best meatloaf I ever ate.

    Looks delicious! It's time for me to smoke some meatloaves too. I usually make 3 at a time, and cover at least one with thin center-cut bacon so it crisps up nicely.

    Haven't looked at Jess Pryles' recipe, will do so and see how it compares with mine.

    I do them on either the WSCGC or the PBC or both at the same time, two on the WSCGC and one on the PBC. So good.

    Lately I've been putting the loaves each on a separate piece of parchment paper so they don't stick to the grate as much. Makes it much easier to remove them from the smoker without tearing off those yummy crispy bits on the bottom. The parchment papers are just a bit larger than each individual meatloaf.

    Here you go, Jared49 . I posted my smoked bacon-covered meatloaf recipe here back in the day. FWIW, some of the family like those crusty bits on top of the meatloaf before adding the sauce so nowadays I do at least one meatloaf without bacon on top.

    The recipe is a big one, making 3 meatloaves, which gives you plenty for leftovers or to freeze for future dinners. Our kids take the extra frozen meatloaves home with them whenever they visit. You can scale down the recipe, no problem.

    I think the only change from this is that now I put a meatloaf-sized piece of parchment paper under each loaf on the grill grate for easier removal without breaking off those delicious crispy bits at the bottom edge of each meatloaf.

      Wow, thank you, Kathryn!! I’m certainly going to give it a try. I love a good meatloaf. I’ve smoked a couple but they’ve been kinda blah. I will post my results.

        Now that you've got a brand new gasser with full-sized griddle insert, you can make killer meatloaf sandwiches on that griddle with the leftovers.

        I have to tell you again how delighted I am at your win this month. It couldn't have gone to anyone more deserving than you, Clawbear57. I bet your family is thrilled for you as well. Good things happen to good people, is the saying, and this time it is absolutely true.

        Thanks Kathryn, you are mighty kind yourself. I will be making a lot of good food hopefully. It will have to wait a couple of weeks. I'm leaving for Honduras for a week on a mission trip Friday morning..

        A friend of mine uses ground turkey and adds chopped frozen spinach, squeezed dry, to the mixture. It's pretty tasty, adding a nice flavor. I never would have thought to add the spinach until I ate her meatloaf.
