    Goose pastrami

    I am smoking some goose pastrami for my nephew tonight. Brought the it to about 170 aiming for more of a dried beef texture. They are cooling just enough for a taste test.         Nice work! And congrats on the geese. I didn't have time to get out for goose season this year. Loaded up on ducks though.
