        Pretend it's a big toothy yardbird. ;-)

More seriously, I've had it cut in chunks and deep-fried. I really liked it. Not a super-strong flavor, so you can take some clues from how you handle chicken wrt spicing etc.

Is that one of things you hear about being abandoned in the sewer system and grows up to terrorize the town after feeding on radioactive cockroaches that escaped from the secret government lab

Its a 4ft gator. It has been cleaned and skinned except for the head and feet.

How funny. I actually had my first taste of gator this past weekend in the form of a burger. We did some research, and found that any sort of a cajun-style rub/seasoning will go with it pretty well. But the flavor of the meat itself is fairly subtle, so be careful not to overpower it with too much seasoning!

I've eaten alligator twice, both times down in the Keys and both times got extremely sick. No help on this one but good luck!

The first time I had gator was just outside of Lafayette, LA. It was early and I was the only customer and when I asked the nice lady server what to expect, she explained (in a strong Cajun accent) that "Some people say that ol' Mr. gator tastes like rubber. Other people say that ol' Mr. gator tastes like chicken. To me, that ol' Mr. gator tastes like a rubber chicken.". The gator was excellent and she got a well-deserved and generous tip ...

My friends at Louisiana Crawfish have some grilled gator recipes on their web site. http://www.lacrawfish.com/Recipes.aspx Never tried them myself but all their other recipes are great!

Only gator I ever tasted was at a walk-up beach eatery at Isle of Palms in South Carolina. Depp fried, like a perfect combo of fish & chicken from what I remember. Yum! Never had it smoked. I look forward to your results.
