I like cooking with varying exotic meats. I cook with yak and camel fairly frequently. I’ve also worked with kangaroo, ostrich and muskox along with numerous North American game animals. Does anybody here have a decent source for some different exotic game meats? I’d like to give llama a go, maybe some other varying African animals, or really anything.
Elk is delicious, and I was lucky enough to have a source of moose for a while, and it's even better. I used to like squirrel as a kid, but haven't had much luck cooking them myself--maybe I'll try again this fall.
Cottontail rabbit and squirrel are both fantastic game meat. I was an upland bird hunter and friends were surprised when I told them I prefer those to my birds.
