Polar Bear Liver: Wild Game to Avoid

Apparently one gram is toxic to humans. Also, seal
liver is the same and polar bears eat seals so avoid both.

Of course, maybe our resident wild game expert texastweeter knows a workaround.

Nope, vitamin A poisoning will get you, no way around it. Also when eating and kind of bear meat gotta be careful of trich. Most cases in the US are from bear, not wild pork. Now, venison liver is great, especially young ones.

There's a good reason why I don't eat internal organs.

And puffer fish liver also, (fugu-kimo).... although a little is supposed to tingle nicely - I aint gonna try it.
Tetrodotoxin, 1200 times more deadly than cyanide - I don't like those odds.
So careful when preparing your fresh catch!

If I had the opportunity to try the puffer fish from a highly experienced chef that knows how do it, that would be fun. I have read that most injuries result from new chefs that don’t know how to prep it safely.

Here's an idea......don't eat an endangered species. Sounds good to me.

That is interesting though. Also, you would rarely ever eat an entire liver anyway. Imagine how huge a liver is from a steer. I would imagine you would get Vitamin A poisoning from that too.

The inuit are still allowed to harvest them.

Yeah, they've earned that right, I suppose. If you are living in that, eat whatever you can.

Liver is catfish bait. Nothing more or less. Back in the old eat what’s on your plate or leave the table days, I left the table.

Always glad to see my Bear Union dues being used for effective public campaigns like this. Yep, any bear’s liver will kill you, all bear meat will give you trichinosis, and in our next press release you’ll all learn that touching bear fur gives you leprosy. Best advice to all is just leave us bears alone, we’re dangerous to you health.🙂

Bear meat is actually delicious. And bear grease is better than lard for most things, taters especially. I have shirt that says "What doesn't kill you will only make you stronger. Except bears; bears will just kill you."

Thankfully, I have a very firm rule. I do not eat bile ducts for any reason. The end.

Here's an example of why we should always check sources. Wikipedia states "It has been estimated that consumption of 500 grams of polar bear liver would result in a toxic dose for a human." https://en.wikipedia.org/wiki/Liver_(food)#Poisoning
And it cites this paper: https://www.ncbi.nlm.nih.gov/pmc/articles/PMC1257872
So I read the paper, and found the part where it states (based on estimates from rat studies with polar bear liver), "[The amount of] vitamin A sufficient to cause immediate illness... would be present in 375 g of bear liver..., not an excessive portion to be eaten at a single meal."
Let's just err on the side of caution and go with 0 g.

I'm pretty sure it would be the polar bear eating my liver and not the other way around anyway...

If I had to die by polar bear it would be a tough decision on which of us gets eaten. Maybe he would die from alcohol poisoning after eating me.

Unless it's foie gras, I avoid all liver. Always. And foie gras is so expensive, I eat it only once or twice in a decade.
