This looks amazing! I'd be all over that. There's a higher-end place in my wife & I's favorite foody town up north that does this type of thing but I've never done it.

That’s beautiful! There’s not one thing on the menu that I wouldn’t have loved to try. I miss the old wild game feeds we put on in Perryton. There would be grilled whole venison blackstrap with an incredible escoffier’s sauce. Deep fried jalapeño pheasant with cheese grits. Roasted asparagus in lemon sauce. There was a salad we had every year that I’ve not seen anywhere else. It was a small bed of baby spinach topped with sliced kiwi fruit then sliced ripe strawberries with a homemade poppy seed dressing. It was wonderful. Our feed couldn’t touch what you were treated to but I doubt few could.

I have been to several wild game dinners put on by local sporting clubs. Always enjoyed the meal while not up to the quality of the above dishes still some excellent food. There is always a selection of appetizers that include some really exotic meats such as cougar and beaver.

Pretty cool. I’m not super game-adventurous, but I’d try anything there. I’d pass on stuff like bear and squirrel.

I had a bear burger one time. Thoroughly did not enjoy it. But I also cooked it up the night we found out my wife was preggers with our first child. Being an overprotective husband/future dad, I cooked those suckers to about 200. So I'm probably not the best person to ask. I've often wondered about the legality of serving wild game in restaurants and grocery stores. I'm not against it, I've cooked and ordered it myself. But if it really was "wild", then it can't be USDA approved. So how can it be legally sold in stores and restaurants? Unless it's not truly wild and instead somehow farmed? Just something I've always wondered about.

Usda will insect wild game. Wild pork can even be sent to a usual plant to be slaughtered and inspected. Many states, Texas included, have state inspection programs that need usda standards on certain animals. On others it has be be sold only in TX.
