    Elk Brisket

    Has anyone ever cooked elk brisket?
    Have two smallish pieces that are about 5-6 lbs each. But being elk, there’s really no fat on them.

    Suggestions?

    I would not smoke them. I would braise them in a dutch oven where you can add fat (tallow) and other ingredients. The brisket from an elk will only get really dry and tough when you smoke it alone. I would throw it in a dutch oven and place that on the smoker. (Basically make a chili out of it) You will still get smoke on the meat, but the braising will help make it tender and allow you to add flavors and fat.

    IMHO, I know I will get heat for this, but, wild game is really only good for jerky if you are smoking it alone.

      I have seen bison brisket smoked successfully which is a very lean meat. I don't know how it compares to elk, but elk may be even leaner than bison. They are definitely a more active animal.

        I smoked a bison brisket, it was good. But I did add tallow to the foil and put that over the top .

      I’ve had elk stroganoff a couple times, and it was delicious. Of course you’re adding ingredients that have fat, such as sour cream.

      BUT Elk Osso Buco is amazing!
