Nice, elk tenderloin is just great! I do love chili, but I think it would be a waste dropping such high quality meat into a chili.
I vote for hefty steak sandwiches. Invite some friends over, cut thick steaks and place between two slices of bread. Serve with some hot sauce on the side, slices of cheddar and a few cold beers. Done.
