    Quick & Easy Baked Tacos w/ Leftover Smoked Meat

    Not too long ago we found ourselves with a little bit of leftover smoked chicken, chuckie, and 2 wibs. Then my wife found this recipe online - it’s for baked chicken tacos, but clearly any meat works and we made a bunch with what we had lying around for dinner one night and froze like 3-4 meals worth.

    How to make baked chicken tacos in bulk with filling options ranging from fajita chicken and chipotle pineapple chicken to chipotle beef or bean and cheese.


    They’re delicious little buggers (tho rib meat was a bit rich in them). But what has been really great is how easy and quickly they reheat after freezing! We do 6 min instead of the 2-4 he uses, but we actually like them better reheated this way because they get even crispier. Just grab a ziploc full of them out of the freezer and 15 min later we’ve got a meal that we all like.

    Anyway, just wanted to share since people are always looking for ideas for leftovers. Oh! Another thing we had leftover was jalapeño popper filling - AMAZING in these, highly recommend that! 👍🏻

    I'm sitting here munching on a Schwann's chicken and cheese taquito just imagining how good these tacos must be. I'm hooked on making adobo grilled chicken thighs on my griddle, so this is yet another idea for how to use them.

      Too funny! I opened the freezer today and said "Hey, what are we having for lunch - we have some frozen taquitos in here". And she said "why would we do that when we still have those baked ones we froze?" SOLD! Adobo chicken thighs are going to be awesome in these... and as my daughter says: "Tacos are the perfect food!"

      My wife has been something very similar for quite some time. The only real difference is she uses already made taco shells.

          Those look great! And the adobo chicken you mention! Dynamite!!!

          I’ve got some chuckies marinating in adobo now - going with Birria Tacos tonight. But the leftover adobo I have, gonna go with chicken adobo tacos! Thanks for the idea!
