Not too long ago we found ourselves with a little bit of leftover smoked chicken, chuckie, and 2 wibs. Then my wife found this recipe online - it’s for baked chicken tacos, but clearly any meat works and we made a bunch with what we had lying around for dinner one night and froze like 3-4 meals worth.
They’re delicious little buggers (tho rib meat was a bit rich in them). But what has been really great is how easy and quickly they reheat after freezing! We do 6 min instead of the 2-4 he uses, but we actually like them better reheated this way because they get even crispier. Just grab a ziploc full of them out of the freezer and 15 min later we’ve got a meal that we all like.
Anyway, just wanted to share since people are always looking for ideas for leftovers. Oh! Another thing we had leftover was jalapeño popper filling - AMAZING in these, highly recommend that! 👍ðŸ»
