Sorry to hear about the funeral. Usually the best part in our circle is the post funeral lunch served in the church basement by the church ladies. The usually make what has become known as funeral hot dish which is a riff on tater tot hot dish which is outstanding because these ladies make everything from scratch!
When my brother passed earlier this year it was landeagers and sauerkraut and German potato salad.

Usually make my own riff’s on Memphis Dust and BBBR. Also use Meathead’s commercial rubs and occasionally try something new. I like a couple from Tuffy Stone and Kinder’s. After several surgeries, I’m very sensitive to “spicy” stuff, so I need to be careful about heat levels.
First thing first, I’m very sorry for your loss, brother. You have my sincerest condolences and I hope you are doing alright. Second thing, those nachos look fantastic so far!
That looks great. I've been thinkin' about doing something similar with some large flour tortillas. I'm thinkin' I should also add either some pulled pork or pulled beef.

Any thread that says "Nachos" open at your own risk. I told myself "Don't do it man!" but...I ...just...couldn't...resist. Good looking grub amigo! Before the holiday's I was on the keto diet, went off of it so I could eat Christmas cookies and stuff then planned on going back on it. But all of your bean posts posts are making me want to just say heck with it.
Mr. Bones It's all good. I'm gonna stay on a traditional diet but keep sugar consumption down. If all goes well I'll write a book..."The low sugar, high bean diet" LOL.
