I can never get the tortillas right. They always come out soggy.

CaptainMike - make a separate chile oil for the tortillas. It’s a guaranteed way to work!

If this distracts from the original post, I can remove but here’s a simple chile oil for you to use for the tortillas. I find it much easier than trying to skim oil from your cook. This is a fail safe way to get perfect birria tacos!!!!! I got this recipe from a YouTube channel years back - I think Views from the Road? It’s great!

Ah, beef birria. I sometimes put hominy in mine. I like the chew the hominy provides. Too hot right now in the foothills, but I'll be making it in October.

It is very good in a burrito too.
