    Tacos de pescado Ensenada style

    Hey gang,

    I know this is pretty common and not anything revelatory, and that most of us have our own version of this. It was simple, and delicious so I thought I would share. We served these to guests and they were a huge hit.

    Fish: Trimmed and portioned vermillion rockfish

    Batter: 1 cup flour, 1 tsp backing powder, 1 tsp salt, 1 tsp chili powder (I used red hatch chili powder), 1 cup of beer - add more until you reach desired consistency

    Fry in oil till crispy and golden brown. I used avocado oil. I like them extra crisp so I fry them till a little darker, but not burnt. Immediately after taken out of oil, a little squeeze of fresh lime, S&P, a sprinkle of chili powder.

    Chipotle crema: 1 cup mayo (I like Dukes), 2 chipolte chilies in adobo, seeds and veins removed. I like it spicy to I used 4. 1/2 tsp adobo sauce. 1/2 cup sour cream or Mexican Crema. 1 good pinch of salt, a squeeze of fresh lime juice, and a hefty pinch of sugar to balance the adobo.

    Curtido (Pickled cabbage): 1/2 head of green cabbage shredded, 1 or two carrots (depending on size) shredded, 3 habaneros and 2 red Fresno chilis diced (I like it hot), 1 1/2 cup white vinegar, 1/2 cup water, fresh ground black pepper and course sessile to taste, a squeeze of fresh lime. Let sit in fridge for a couple hours - overnight.

    Assemble: Warmed corn tortilla, 1 or two pieces of fish, a good splash of chioltle creme, top with Curtido.


    I adapted this recipe from website "Mexican Please".

    It's tough to beat fried fish drenched in a Chipotle Crema sauce. These Baja Fish Tacos are also served up with a batch of pickled cabbage -- too good!

    25 years ago, my wife and I were down in San Diego for a work conference. We went out and by the water and we found a food truck selling Baja Fish Tacos. We analyzed what we bought and then reconstructed it back in Los Angeles.

    We forgo the vinegar in the slaw. Also, we add Chili Sauce and homemade Tartar Sauce. The batter is very close to what we make.

      Mexican Please is my first site to go to for salsas, pot beans, and any other foods in that style. His website is well developed and easy to follow. Not only did I pick up a bunch of salsa skills, but the eggs poached in salsa is well worth a try.

        I need to give this a try. I've yet come across a white fish taco that I truly really like. I've gotten close, but I've never nailed it.

          Other than the cabbage AND especially the sauce, this is the most authentic recipe I've seen for the San Felipe/Ensenada style tacos I grew up with. I get times have changed... but in the late 80's... it was a dude with a cart and some flame and oil, a kid would run up from the beach with a fish, it would get cleaned, sliced, battered and fried and you got the fried fish with some lime. A fresh made corn tortilla. Sometimes some salsa but usually not.

          But I do agree the cabbage elevates it, and I'm totally saving this.
