    Which salsa/tortilla/garnish etc. goes with what taco? A guide.

    This isn’t definitive, it’s just suggestions from someone who has sold tacos in Mexico City for 40 years. Like my suggestion to buy this book, La Tequiza de Don Aurelio. Just the tips on the very first page alone elevated my tortilla game.

    They download as 12 .pdfs. Rename them (because otherwise they all appear as “La Tequiz…” and you can’t tell them apart) and transfer them to Kindle, or whatever ereader you use.

      Burritos did not appear to be part of the analysis; my comment was directed toward tacos (per this chart--though quesadillas and enchiladas are mentioned). No slander toward Sonoran Burritos was intended.

    He is from central Mexico, so he will have a corn tortilla bias.

    I’ve been really working on making corn tortillas. I’ve reached the point where I’m only tossing one out of ten (through misplacing on the coral), and they almost all puff. But corn tortillas are more delicate than flour tortillas, because they don’t have any gluten holding them together. And they don’t stay fresh as long, and they don’t freeze as well. Store bought soft corn tortillas are pretty bad; at least store bought flour​ tortillas are inoffensive, like white bread.

    I have a lot to say about making corn tortillas, but I’m not ready to say it right now. They take commitment, not just to making them but to eating them daily.

      Corn tortillas also tend to be much lower in sodium, if that matters to you.

    This is great. Thanks for posting. I'll have to take a closer look at that cookbook. Doing tacos for a family get together next Saturday.

      The fact that every single taco (except quesadilla) says "Corn" tortilla is best has me doubting anything else on these charts, lol.

        Haha! I actually loved that corn tortillas were the only suggestion…minus that lonely quesadilla….but is that even a taco! 😂

      Books 1, 2, and 3 are Central Mexico, where corn tortillas are dominant. Later books are Northern Mexico, where flour tortillas are dominant.

        I get it, just had to make a joke. My wife and I are at complete odds with tortillas. I can't stand corn and she can't eat flour (celiac) so we are both elitists in our respective camps.
