Which salsa/tortilla/garnish etc. goes with what taco? A guide.
This isn’t definitive, it’s just suggestions from someone who has sold tacos in Mexico City for 40 years. Like my suggestion to buy this book, La Tequiza de Don Aurelio. Just the tips on the very first page alone elevated my tortilla game.
They download as 12 .pdfs. Rename them (because otherwise they all appear as “La Tequiz…” and you can’t tell them apart) and transfer them to Kindle, or whatever ereader you use.

He is from central Mexico, so he will have a corn tortilla bias.
I’ve been really working on making corn tortillas. I’ve reached the point where I’m only tossing one out of ten (through misplacing on the coral), and they almost all puff. But corn tortillas are more delicate than flour tortillas, because they don’t have any gluten holding them together. And they don’t stay fresh as long, and they don’t freeze as well. Store bought soft corn tortillas are pretty bad; at least store bought flour tortillas are inoffensive, like white bread.
I have a lot to say about making corn tortillas, but I’m not ready to say it right now. They take commitment, not just to making them but to eating them daily.
Scotch: Current favorite- The Arran (anything by them), Glenmorangie 12yr Lasanta, sherry cask finished. The Balvenie Double Wood, also like Oban 18yr, and The Glenlivet Nadurra (Oloroso sherry cask finished) among others. Neat please.

I get it, just had to make a joke. My wife and I are at complete odds with tortillas. I can't stand corn and she can't eat flour (celiac) so we are both elitists in our respective camps.
